Mixed
vegetables, roughly chopped into 2" pieces
(try any combinations of: sweet potatoes, broccoli, parsnips, new potatoes,
swedes, bell peppers, mushrooms etc.)
Garlic cloves (as many as you like, unpeeled)
2 tbsp Ripe Gifts' Honey with Ginger
1 tbsp olive oil
Freshly ground pepper & salt to taste
Fresh or dried basil, to taste
Cherry tomatoes, washed but on stem
Freshly grated Parmesan cheese
Dressing,
mix equal quantities of:
Ripe Gifts' Honey with Ginger
Virgin olive oil
Balsamic
Vinegar
Soak the
clay pot for 15 minutes and drain. Mix all the ingedients (except for
the cheese, tomatoes and dressing) together well and add to clay pot.
Cover and place the clay pot in a cold oven. Set oven at 250°C (480°
F). Bake until the vegetables are cooked, about 45 hour. Uncover, adding
the cherry tomotoes. Bake until most liqid has evaporated. Sprinkle over
the cheese and bake or grill until golden.
Remove from oven and pour over dressing. Cover until served. Delicious
served as an appetizer with toasted bread.
